This Week From My Kitchen

French Toast with A Twist

Coffee creamer in French Toast?! You got that right!

I am the only one who uses coffee creamer in my house so it usually takes me forever to go through the whole bottle.  And almost-always, I end up purging half the bottle down the sink.  I know... I know... what a waste of a perfectly good creamer, right?   I feel the guilt, but I get tired of drinking the same flavor coffee each morning for weeks!  :(

So one day, I got a little creative and started spicing up our breakfast with it.  I now use flavored coffee creamer as milk substitute when making french toast, pancakes, and crepes.  And not only do they turn out delicious, but my kids LOVE them too.  Best part, NO MORE WASTED FOOD!  :)

If you haven't tried making french toast, below's a basic recipe.  I highly suggest you make it with coffee creamer (whatever flavor you have in the fridge now.)  Any brand of cream would do, but my personal favorite is International Delight as it comes in creamy dreamy flavors like French Vanilla, Birthday Cake.  There's also other classic  flavors--- Caramel Macchiato, Vanilla, Hazelnut!

BASIC FRENCH TOAST RECIPE

INGREDIENTS:

  • 1 egg
  • a pinch of salt
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon, Ground
  • 1/4 cup milk (or substitute with flavored creamer of choice)
  • 4 slices bread

INSTRUCTIONS:

  1. Beat egg, salt, vanilla and cinnamon in shallow dish. Stir in milk.
  2. Dip bread in egg mixture, turning to coat both sides evenly.
  3. Cook bread slices on lightly greased nonstick griddle or skillet on medium heat until browned on both sides.
  4. Serve with bacon or sausage (or both!)

That's it!  Enjoy and let me know if your kids notice the difference.  ;)
